MUFFINS IN WAFER CUPS

Ingredients: 270 to 300 g of flour, 150 g of sugar, 10 g of baking powder, 2 teaspoons of baking soda, 3 dcl of milk, 1,5 dcl of oil, 1 whole egg.

Whisk egg, milk and oil well and add to the bowl containg flour, sugar, baking powder and baking soda . Mix slowly together until even (use the lowest speed on the mixer).

This is the basic mixture which can be used to make also:

CHOCOLATE MUFFINS  – add to the basic mixture: 2 tablespoons of cocoa and 100 g of grated chocolate. Less flour is needed (270g)

MUFFINS WITH RAISINS – add to the basic mixture: 100 g of raisins, 1 teaspoon of cinnamon i grated lemon crust. Less flour is needed (270g)

MUFFINS WITH FRUIT – add fruit of your choice to the basic mixture: cherries, raspberries, blackberries, tangerines, oranges, chopped or grated apples, etc.  – add more flour in this case (300 g)

There are more options for making MUFFINS. You may also add: dry cranberries, apricots, figs, plums (chopped) or haselnuts, peanuts, almond (grated or ground).

CREATE YOUR OWN ORIGINAL MUFFIN RECIPE

Fill the half of each Wafer cup with the prepared mixture (15 – 18 cups needed). Let the cups sit for 5-10 min until the mixture connects with the wafer. Place on the baking tray afterwards and bake at 180 degrees for 20 minutes. The oven should be heated before baking. When baked, decorate as you wish.

No Muffin molds needed, nor greasing of the tray!
